Tart cherry flavor with some light vinegar. Real tart finish. Has some cherry lambic flavor characteristics. Aroma is deep and complex: tart cherry skins with a soft bready malt presence underneath, hints of brett, lightly charred, dry oak must and tanned leather, all wrapped up in a sour fruit blanket. Soft, fluffy palate delivers a two-pronged taste sensation of harsh, iron rich blood simultaneously with a tart, fruity sweetness, wow. Earthy qualities are more notable as the liquid seeps into the tongue: oak, cedar, musty stone, light moss – each of surfaces I imagine wild yeast would look for scarce sugars…the acidity makes my mouth water for more, for more of the soft, velvety palate, more of the rich earthy malts and the sour, lasting fruitiness. Over time, the head grows more dense. The aroma is very interesting with hints of vinegar, tart fruit (cherries, dark grapes), musty oak, and a bit of fruity sweetness. The body is round and enjoyable, with a nice fleeting sharpness from the tart acidity. Slightly sweet at times, but mostly characterized by the sour elements. The finish is tart and lasting with an elegant smoothness imparted by the wood. Tart acidity plays with lightly sweet fruit to give a lovely balance to this enjoyable Belgian treat. Aromas are sweet dark pitted fruit, raisons apples and figs. Flavors are similar but there is brown sufggar and a smokey, woody taste there too. Sweeter that the other few I’ve had of the style. Moderate carbonation and a very thin feel. Aftertaste is a slight acidic sweet taste. Interesting but I liked "the Duchesse" better. Thanks to Captain Cougar for this one.
