Smells very tart and acidic, lots of lemons and other citrus, with some wild yeast as well. Spicy. The flavor isnt nearly as sour as it smells, but the spices pretty much take over. A little peppery, but not hot. The wild yeast characters are evident as well as a nice citrus backbone. I thought it was a pretty interesting brew, almost like a table beer. Soft yeasty barnyard (cow dung, in fact (honestly)) and cheese aroma. The cheese reminds me of Sorte Sara. Sharpish dry acidic wooden barnyard and cheese taste with grassy metallic notes. Thin body. Sharp, astringent mouthfeel. Lots of fizz in mouth. Clean and fresh palate. Weird thing to say of a beer that tastes of cow dung, but still true. Long, dry lemony barnyard and cheese aftertaste with watery notes. Really wildlly unusual, a light and drinkable lambic that’s also sharply assertive. Aroma is sweet earthy, yeast, and loads of funkiness, quite a lot like blue cheese. Flavours are much the same, surprisingly sour and bitter though, didn’t get that in the aroma at all. Murky orangish yellow with a big foamy white head that collapses pretty quick. Very yeasty taste with some lemon citrus up front and a light sourness. Funky, low in alcohol. Literally has the look and aroma of horse piss. Unfiltered lemon yellow body with a 2-finger stark white head. Sour, tart, and stinky...Munster, Limburger, and Maytag Blue Cheese are all there. Smell: Light malts and floral notes make way for a sweaty Bretty scent and particularly distinct aroma of cheese.
Taste: Light, delicate maltiness gives way to a veritable buffet of cheese flavors -- nutty Edam, creamy Brie, and even helping of Bleu Cheese. Subtle floral hoppiness and bitterness. Meager pinch of pepper. The crisp finish is bone dry with a lingering mix of funky sourness and light bitterness.
Mouthfeel: Light-bodied. Medium-high carbonation.
Drinkability: Aptly named! A lighter version of It’s Alive, which was essentially a homage to Orval, so, if you’re up for an Orval-Lite, give this one a try.
