After my experience with the single hop cascade, I was very much looking forward to trying this one. The overall experience was just as I expected. Simple, yet full and flavorful, and perfectly balanced. On the simcoe aspect of the aroma, there’s a good amount of lighter citrus notes, pineapple, mango, minor grapefruit, fruit basket, soft florals, a minor sappy pine. On the pour, there was big, thick white head, nice retention, a very cloudy full body, and tropical orange in color. As mentioned, the balance is great on this ipa, the flavors are simple, full, but not overly chewy, but there was not as much pop to the finish as maybe I would like, if there was one downside. The simcoe flavors are quite similar to the aroma, but maybe more pronouced in the fuller citruses (pineapple, grapefruit), also some good melon fruits, also more herbal that I would guess from the aroma, but the flavor is dominated by the citrus and medium fruits. This malt balancing notes on this ipa for both flavor and aroma are for the most part very close to the single hop cascade: biscuits, caramel, and cereal pale malts. This was a very nice drink. The aroma of sweet fruits, like pine, citrus and grapes. There is a stong hop bitter. The taste is sweet with a lot of bitterness of hops. The aftertaste is dry with a lot of bitter and fruity sweet. The beer in the glass is okay, huge head. Starts dry and woody and shows very hoppy-flowery and fresh notes. Finish is still dry but also well balanced. Clear, amber body with a fair amount of particulate. Aroma of caramel malts and heavy simcoe hops - citrus, grapefruit, pine and resin all come through. The hop flavor develops even more up on the first sip - some tropical fruit comes through...mango and some white grape. Medium, somewhat resinous, sticky body with soft carbonation. Reasonably dry, bitter finish. An extremely delicious beer - I love the idea of using a single hop to highlight its characteristics. Will be looking for more of these. Aroma is knock-your-socks-off awesome. Bright zesty citrus and pine with a touch of light sweet malts that highlights the sweet aromatic properties of this hop. Lightly crackery with loads of clean bright pine flavour. There is a definite lemon/herbal note in here that I’ve not noticed before. This beer is like an ode to the hop. Moderate bitterness. The aroma is all fruity hops, not much different from smelling a handful of whole hops. The wonderful aroma carries through in the flavor, heavy on the citrus/grapefruit hops. While being an awesome example of Simcoe hops, it’s also very refreshing and drinkable. Close to a perfect beer for my particular palate.
