The aroma is well... SIMCOE Duh, juicy fruity and herbal with some resiny pine and garlic catty undertones along with bready pale malts and a hint of caramel, white pepper and a dash of mineral water. The taste follows suit to a tee... hoppy, fruity, catty, and peppery with a layer of pale malts. Chalky and minerally finish. As is the case of most single hopped brews it is a bit one note, but when done right that one note is beautiful sounding. With this brew, that is the case. The mouth feel is sprite but not over-the-top, I did find the chalky finish more than a bit distracting however. All told, one simple but beer geek worthy brew. Well played Mikkeller! Nose of ivy plants (simcoe is the hop I get this particular odor from when it’s in a beer), a little sweetness, and a touch of caramel maltiness. Head is initially large, frothy, off-white, mostly lasting.
Body is hazy medium amber.
Aroma is lightly to moderately malty (toasted grain, cookie), moderately hoppy (grapefruit, apricot), lightly yeasty (dough), with a note of garlic.
Flavor is moderately sweet, lightly to moderately acidic, lightly to moderately bitter.
Finish is lightly sweet, lightly to moderately acidic, moderately to heavily bitter.
Medium body, watery/velvety texture, lively carbonation, lightly alcoholic.
Simcoe isn’t a great single-hopping choice IMHO due to the slightly unpleasant aromatic character, but in most other ways it’s fine. Pretty middle-of-the-pack on a world scale, but if you have a particular affinity for this hop variety it might be worth the high price. Allen (1436), Switzerland

Fantastic retention. Big, musky, citric, Simcoe/cat pee aroma with a pleasant whiff of understated toffee malt. Medium-bodied with a milky mouthfeel and fizzy carbonation.
