Commercial Description:
Mill St Belgian style Wit is a refreshing beer made with a unique blend of ingredients. The soft texture and pale colour comes from the use of wheat. Coriander, orange peel and our special yeast produce the complexity and depth of fruity flavours contained within the glass. This beer is unfiltered. The resulting cloudiness gave rise to the term Wit, or White beer

Slightly hazed pale golden colour with a short-lasting fizzy white head. The nose is vibrant and fresh with a great citrus splash, some yeast and a touch of spice. The front is gassy with a bit of yeast. Quickly there is a sweet malty body that sustains the fruit and slight bitterness of the finish. Nice wit from a local brewery!

Bottle: Poured a yellow color ale with some white hue with a medium foamy head with average retention and subtle ring of lacing. Aroma of wheat with some very subtle coriander and some sourness. Taste is a mix between some medium wheat malt notes with some very subtle spice mix. The whole thing is unfortunately dominated by some sourness which might be explained by some infection. It is kind of surprising since I thought I had a fresh batch.

Pours a nice, somewhat hazy pale gold, with a medium white head. The aroma is interesting, I can smell actual orange peel and coriander, which I’ve found is usually absent in a lot of Wits. The taste is nice, again, coriander, orange peel, spices, nice malts (wheat and barley) very soft feeling. The softness is good, but it comes with a bit of watery palate, which is probably due to more filtering. A decent and enjoyable beer, too bad there isn’t more yeast though.

A pleasant surprise after trying their organic pil. Nice pungent aroma with spice and fruit. Fairly clear pour for a wit. Spicy flavour, yeasty, with crisp finish.

Pours a cloudy pale yellow with a thick dense white head. Aromas of bergamot, sweet spices and estery wheat. Palate delivers much the same, light and soft. Very nice.

12oz bottle purchased from brewery. Pours a cloudy pale straw. Medium spicy aroma. Taste is nicely spicy and wheaty. I sound like a stereotype, but this really IS a nice beer on a hot day like today. I was told at the brewery that the bottled versions is a bit different than on draft - more spices and yeast, I think it was.

341ml bottle, 5% a/v Cloudy straw colour with a thin head. The nose is spicy, hoppy, and fruity. Very complex and complimentary. The taste is of citrus, banana, coriander, and cloves. A fairly well bodied beer for the style, with a peppery citrus aftertaste. Very nice Wit, and great to see it brewed by a local Micro. Keep up the good work Mill St.

Golden in colour, slightly hazy, lingering white coloured head, good lacing. The aroma is lightly spiced, moderate amounts of banana, lemon citrus. The flavour is of lemons, bananas, some spice - cloves and pepper, mild sweetness. Creamy mouthfeel, medium/light body, medium/high carbonation. Finishes spicy, lingering and peppery. A good wit, its nice that I can get this one localy. Nowhere near over the top.

341ml bottle from the LCBO in Peterborough, Ontario for $11.35 a 6-pack.
Purchased on August 8, 2007 and opened on August 22, 2007.
