Very sour flavor for a mead, and I am OK with this, but it does make it very unusual. There is honey flavor as well, but it is not sweet. Well... this one’s certainly odd. Charred wood, honey and agave on the nose. Tart sweetness on the tongue. Some honey, pineapple and plenty of fresh run agave distillate. Flat an slightly hot finish. From a 750 ml bottle pours a clear light golden beverage with no head or any carbonation. Aroma of light tropical fruit, some honey character and a touch of white pepper. Taste is thick and oily with a honey and pineapple flavor. Finish is slick, slightly flat with a lingering pineapple and slight oak aftertaste.
