Commercial Description: Seimaibuai: 60%
Nihonshu-do: +10
Acidity: 2.1
Dry and crisp, yet round and creamy, this charming sake offers bright notes of citrus with gentle hints of vanilla and marzipan.
Bottle: Pours with a light yellow hue and thick sheets; not legs. The nose is very strong, lots of dry alcohol, firm mineral and koji with some light fruit and puffed rice notes. The flavor has huge impact of alcohol and acidity up front with a dry koji finish, a long drawn out tail, and a massive body. This is one masculine sake! Just the stats on this one were intimidating, high SMV AND acidity?! That’s crazy! I know I lean more towards neutral and low acidity, but this one has its place. Where I usually regard sake as a more floral and intimate version of white wine, this stands up more like a shochu or whisky. On the rocks?
