Commercial Description:
Club exclusive, only 40 cases were bottled. Nama Zume is a style of sake that has been pasteurized once before aging, but is not pasteurized a second time prior to bottling. Sake that sees only one pasteurization displaces fresh, round, and youthful characteristics.

Bottle: Pours clear with nice legs. The nose is light and fruity with a subtle alcohol note, some rough koji and a bit of peach or other fruit. The flavor has a moderate impact with some acidity, a chewy sweet mouthfeel and a robust minerally body. For sakeone, this is a step in the right direction, I like the freshness and underlying fruitiness in it, but their koji and akita-machi rice combo deliver a predictable amount of roughness and acidity which doesn’t rub me the right way. Fresh? Absolutely!

OK, I feel weird being the first to rate this, but here goes: bottle thanks to Jordan, drank with footbalm and Wade at Jordan’s restaurant. Pours out a clear color with thick sugary legs. A sweet hot nose, some pear and lots of warmth. A sweet and clean flavor, some fruit, perhaps pear and a white wine quality. Nice and fiery. Usual disclaimer: I know nothing about Sake.
