I found the flavor of persimmon to be similar to pomegranate - lighter and more citrusy. To me, this is a beverage that needs to accompany a food of some sort to get the full effect. Perhaps the Asian food or barbeque specified in the commercial description, or a hearty salad. TAR (1996), Boulder Co., Colorado, USA Mar 29, 2004 Whitewashed pear. Slow-moving legs coat the glass upon their descent. Remarkably bright aroma of fresh flowers, pear and perfumey alcohol. Firm wood notes lurk beneath the honeysuckle, melon, dough and persimmon skin. Slippery and juicy on the tongue, yet heavily gritty and filmy. Puckering and dry right away with hints of flowers, lavender and an exceptionally clean alcohol backdrop. The dry grittiness amplifies the soured white grape tartness as it continues to build toward the finish alongside the light persimmon bitterness. Rather simplistic, notably dry and appetizing finish of flowers and table grapes with only a trace of persimmon and honey. This meadery has certainly perfected the art of hiding the 12%+ alcohol in their meads. Very solid, but it doesn’t quite hold a candle to their delicious Agave and Honeymoon nectar.
