Honey adds nice dimension, making it a little more satiable and full. TAR (1998), Boulder Co., Colorado, USA Aug 6, 2004 Draft: Bright golden with a honey haze. Creamy dollop of dusty-white foam. Juicy hop rind aroma laced with subtle phenols, orange peel, star anise, white grape, and Belgian yeast. Soft, spongelike carbonation. Flavors are heavily hopped and citric with notes of orange and apricot. Hop flavors are elegant and there’s some acidity to help balance the sweetness. Vague mustiness from the yeast. Well-hopped finish with notes of dried apricot and honeyed malt. Sweet cherry/malt aroma. Touch of spice. Milky,white,big bubbled, head. Great aroma,malty,hoppy(wood,spicy),and very earthy(hay,wheat). Mouthfeel is full,but not overdone,very drinkable.Flavors are earthy,yeasty(bubblegum) and malty. Finish is loaded with hops and quite noticable yeasty. The more I drank,the better it tasted.Kind of like a biere de gardish,Saison.Leaning more toward Saison,obviously. Interesting and I think I'll have to do an all Saison session sometime soon!
