Commercial Description:
La Folie Wood-Aged Biere, is our original wood-conditioned beer, resting in French Oak barrels between one and three years before being hand bottled, numbered and corked for your enjoyment. Brewmaster, Peter Bouckaert, came to us from Rodenbach – home of the fabled sour red. Our La Folie emulates the spontaneous fermentation beers of Peter’s beloved Flanders with sour apple notes, a dry effervescence, and earthy undertones.

2007 750ml bottle. Poured deep brown in color with a hefty tan head. Aroma of tart cherries, wood and lightly funky. Flavors of tart cherries, oak, vinegar, lemon citrus and sour funk. Nice body and mouth feel. A little bit on the acidic side but overall quite incredible. Grab some tums and enjoy a bottle.

750ml from a good friend - thanks, Jeff!!! This one’s been aged about a year, and immediately upon the pour (dark brown, murky, well carbonated, good depth) I was practically drooling. Lovely tart aroma, with intensely puckering cherries and other autumnal fruits, the kind of thing that really goes nicely when you’re in the mood for it. More intense than many other American sours, but nonetheless possessing a nicely subdued woody quality that creates balance. Shimmering soft mouthfeel courtesy of a lively carbonation, and a very long, papery finish that lingers on the tongue. High expectations for this one were well met!

Zeeland 08’ tasting. Poured a cloudy brown color. Aroma was sour cherries. This one really packs a punch in the flavor. Vinegar and wood, quite sour but smooth and balanced. This, was just really tasty. Nothing that hasn’t been done, but they did it well.

Bottle: Smells sour, plain and simple. Poured dark amber in color. Flavor was just sourness. Medium body. Puckering texture. Average carbonation. Sour finish. So sour your mouth just starts pouring out saliva.

#1100 - 750ml thanks crosling - Aroma is sweet and sour. Red vinegar and red wine with cherry and oak. Pours dark garnet with a ring head and great lacing. Flavor is very sour. Red Vinegar, lots of cherry. oak and sour yeast goodness. The carbonation really brings out the sour on the tongue. Palate is tart, dry and sour. Very nice brew.

Bottle 71084859. Pours with a decently sized rocky, light brown head that flatens decently quickly. Hazy reddish brown body. Head sticks to the side of the glass quite well. Aroma of black cherries, oak, red wine, must, vanilla, currants, caramel, tartness, brown sugar, funk, and unripe raspberries. Very complex. Taste is very sour with light cherries and oak smoothness. Dry and mouthpuckering tartness with light, lively bubbles. The more I have this beer, the more I love it...every single time...Love the 750’s and have tons of them thankfully now that it is only 22oz.

Can’t thank Jake (BlackForestCO) enough for this gem.
Beautiful cloudy brown that shimmers with red tones and a moderately-sized off-white head. Nose is tart and acidic with loads of wood, some raisin, sugary sweet berries, grapes... delicious. Flavor builds on this, increasing the sour components and the creamy lactic notes... superb balance. Palate is full and acidic, spritzy and refreshing, and near endless in grape and lactic wood. Drank 750ml and wanted more... absolutely superb stuff here.

Much thanks to dpjuart for letting me try this. I’ve been waiting for so long.. Cloudy red body with a thin tan head. Wonderful sour, acidic, funky aroma with loads of fruit and vinegar. Sharp, biting taste. Acidic, sour, and fruity, with lemon, cherries, strawberries and much more. Damn near perfect in my book. Beautiful.
