The aroma is very citrusy and there is an almost earthy overtone to it. The flavor is very complex. There is the huge sourness that has a very sugary/sweet side to balance it out a touch. Pours a beautiful cloudy opaque woody unfiltered apple cider hue. Nice tart acidic green apple, rasberry, cherry, oaky tannins, and once a gain a sugary sweet sour candy like tearjerkers. The palate is delightfully tart, but well balanced with huge lemon, green and red apples, definate cider vinegar as well. I had this as New Belgium Foedre. Pour is cheddar cheese orange, cloudy with a 1 inch off white head. Aroma is super sour, very tart, even medicinal. Taste is huge: super, mouth puckering, sucking on a lemon, sour. Green apple tartness in the finish. Citric, lactic. Sweet, than suddenly very dry. Finish is simultaneously mouth-coating and drying. Interesting in an over the top sour sense, but too overpowering to me. The whole experience was overwhelming. My stomach lining was screaming for me not to finish this one.
