The aroma has hints of pear and vanilla with a strong malt back. The flavor on this beer is amazing. Very complex and many many different layers. The pear and vanilla hints in the aroma come through in the flavor as well, and there is also hints of banana and a slight reminder of angel food cake. Very wonderful. The color was a clear golden yellow with a small white head. very nice smell of spices and pepper. The taste had a slightly Belgian yeasty, funk (not sour) at first but was actually very easy to drink and I did not notice the 8% at all. It felt much more like a 6% beer. I prefer this over the regular New Blgium tripel because it didn’t seem as carbonated.

It’s a fairly sweet, citrusy, yeasty brew that I found quite similar to their regular tripel. The main difference I noticed was more obvious spices in this one and it worked for me. Yerba mate was slightly noticeable ... earthy, faintly smoky, tea-like. In some ways it was mead-like, and in other ways it was white wine-like. Herbal aromas were pleasant. Yeast seemed to contribute well. Not too shabby.
