Commercial Description:
A slightly sweeter version of our Dry Mead, our Semi-Dry Mead possesses the characteristic light straw color. The aroma is more pronounced, showing the sweet spice notes unique to East-central Indiana wildflower honey. The flavor is, too, slightly sweet with a pleasant honey flavor. The additional honey used in this variety provides a richer, fuller body and lingering sweetness that makes for a very enjoyable mead.

Out of the bottle at the meadery. This was my favorite of the tour, and I bought some bottles to take home. Very pale yellow in color and still. Very floral honey forward nose. This semi-dry is much sweeter than the dry offerings from New Day and has a very nice floral and earthy honey flavor. The alcohol shows itself on the inhale. As shig said, this is much sweeter in the comparison, but this is a nice mead that should be tried.

The tasting notes provided by the meadery actually provide a very accurate description of this mead:

5/20/2007: New Day Semi-Dry Mead looks clearer than water! Sweet honey and alcohol pop out of the aroma. The mead is much sweeter than all the other New Day meads. It’s only 4% residual sugar, but since their other meads are all quite dry, this one seems like sugar water or light corn syrup in comparison! There are lots of delicate honey flavors throughout and it is well-balanced overall. This mead has a soft and smooth feel and seems much more full in the mouth. A traditional, sweeter mead.
