Coniferous brettanomyces gently seeps into the cherries and peaches as boisterous effervescence and dry wood help drinkability. This is in no way the Quadrupel you’d expect, but rather a crafty creation worthy of study and convivial enjoyment.
Further Personal Perceptions:
-A ring of foam surrounds the clear pale orange.
-Body is surprisingly lean and alcohol barely tickles.
-There is nothing of the rich chocolatey, roasty and spicy notes you’d expect from the style.
-This is strangely reminiscent of a friend’s homebrew Quad with brettanomyces and cherries.

Aroma of brett sourness, vanilla, light oak, faint candied fruits and caramel malt. The flavor didn’t give out as much sourness as the aroma did, rather more bourbon elements came out coupled with caramel malts. Medium body...sweet and woody with a sweet kinda roasty finish. Aroma, caramel, some spice, molasses, and some fruits, with a nice underlying funk to it. Taste- metallic taste with moderate carbonation. Fairly boozy (upon further research I see its 11% so that explains it), with a sweet sticky consistency. I was hoping for more brett flavour and advertised on the bottle, but couldn’t find much. There is some sourness, but I think the booze kicked the crap out of the brett. Cherry fruit is prominent, along with other dried dark fruits. Some wood from the bourbon, but understated all and all. This is a very complex brew- lots going on which I normally enjoy, but I just can’t get into this one. Not a fan of the finish of the beer- tad too hot. Perhaps it needs more time to mellow out. I’m very surprised at the strength of the Belgian character. Some oak, lots of yeast character. Interesting. Medium-amber in color, very clear with a thin, off-white head. Flavor is sweet, with raisins, brown sugar, cherry pits, caramel and dried fruit. Warming with a hint of sourness (acetic acid) but it is very subtle. Then a buttery oak flavor comes through in the finish, perhaps a hint of bourbon and an almost astringent finish. Full bodied, creamy texture, fairly sweet, while staying dry in the finish. Aroma of sweet grapes and sugar. Taste includes oak and light spice. Overall, the alcohol is rather well hidden under everything else that’s going on here. Crisp, dry finish. A good brew!
