"Some people paint, some sing, others write ... I brew." - Daniel Carey

A few times a year, we will cut Dan loose to brew whatever he chooses, uncensored, uncut, unplugged. Always handcrafted, the bottle you hold is brewed for the adventurous soul. This is a very limited edition and we make no promises to ever brew this style again.

Napoleon hailed this tart beer style "the Champagne of the North." A lively and elegant masterpiece this Berliner Weiss is a kaleidoscope of fresh flavor. Barrel fermentation, Pinot Grigio, Riesling grapes and Wisconsin White Wheat are bottle fermented with five proprietary yeast strains. A connoisseur's rare jewel both spirited and subtle, enjoy your sparkling toast under summer stars.

12oz bottle, served in a pils glass. The aroma is faint, mostly lemon/citrus, light fruit (pears, white grapes), and some light wheat. Very elegant. There is also a bit of tannic wood in the background. Very light gold color with a smallish head. The grapes are the initial flavor and they are fruity and bright. There is a nice lactic tang along with a lemon/citrus flavor. Lingering finish that is tart and fruity. The lacto level on this beer is fairly light, for the style, but there is a lot more going on here than with your typical Berliner Weisse. This would be a wonderful food pairing beer but it is also a very nice drinker too. The mouthfeel is great, both ample at first, but refreshing at the finish. 4.0
Big thanks to tjthresh for bring me this beer.

The beer at one year old is not the same one at a few months. The lacto has taken over and the sourness is soft and pleasant, but quite powerful. The background flavors are still there, providing the beer with a very nice fruitiness to go well with the tartness. The rating is for this bottle.

My first tussle with a New Glarus unplugged. Speaking of tussles, the large head lost out on the battle as it quickly faded into the mildly hazy yellow substance below. My nose wonders if this is a wine or a beer, as it smells a bit like Riesling with the sourness you’d expect from a Berliner Weisse with some yeast and wood tossed in. The beer itself is reminiscent of a wine as well with tannins and dryness along with sourness and tartness. This one was sans syrup and perhaps it could use a little as it was kind of redundant after a few sips. Okay, perhaps I’ll have the next one with a little syrup.

12oz bottle: This one pours a clear, light golden color. There was a decent sized white head on it that dropped off rather quickly. Milder aroma, but what is there is nice. Notes of tart fruits, and actually a bit of a white wine note also. The flavor is a little tart and dry. Fruit notes (apple mainly) a little spiciness, and once again an almost white wine flavor in there also. This is really good!

Very interesting beer. From the bottle, pours a cloudy very light blond with almost no head. Light fruit aroma, a little sour as well. Flavor has a little fruit, a little sourness and it finishes very tart and dry. Interesting.

Bottle. Nice Berliner Weisse. Slight wheat flavor that finishes sour. Like sour dough bread. More sour than the other Berliner Weisses I’ve had. In fact this could almost pass as a sour. I would like more of this one.

Thanks to notalush for this one. Pale yellow straw coloured beer with very high carbonation and a thick white head. Aroma is lightly lactic with a nice soft wheaty spiciness. Flavour is soft and wheaty with a nice light spiciness. A little bit lactic with a nice soft peachiness. Really nice brew.
