Nose is raisin and strawberry, rich honey malt, a little bourbon, vanilla. Flavor is vanilla and bourbon, some bitterness & wood, carbonation is strangely soda-like. Wasn’t expecting that. Some maltiness in there but sour, funky cider vinegar predominates. But the taste isn’t that sour- caramel malty with just a little tart on the finish, very refreshing and unusual. A little bready, satisfyingly smooth body without being heavy, a wierd combination of smooth/ warm/ mellow flavors and sour aroma. Glad I got to try this quirky brew. Beautiful balance that shows brett is not just for sourheads anymore. Not much hop presence. Dopplebock hardly seems a big eneogh category to contain this brew, but I guess it had to go somewhere. kenb (1100), Oregon, USA

THanks to whoever i got this from..been sititng in the cellar calling my name for too long! Nose is sweet candy, spicy...ginger, bananna, bourban and apple. Taste is the same with some toffee, sour cherries and apricots in the finish. THis is quite an interesting and tasty brew. Carbonation is low/medium, body is full. Pours clear amber with a nice beige head that quickly disappears leaving a nice lacing. Aromas of malty, caramelly bourbon alcohol are somewhat overpowering, but not offending. Slightly burning. Flavor was, unexpectantly, somewhat sour and hot from the alcohol but very complex. Oak and vanilla are in the background and should come through nicely after this sits in the corner and mellows for a while. A bit too hot on the alcohol for me but shoul dbe outstanding in a few months. For right ow, one was enough.
Update: Tapped the second barrel and it was fantastic after aging! Harsh alcohol has dissipated to allow Vanilla and caramel flavors. yobdoog (1543), Woodridge NY, New York, USA

Aroma had a bit of smoke and was quite powerful on the bourbon. Also very sweet. Taste is like a bourbon caramel candy. Very sugary sweet. Not that balanced, a bit sticky. Clear caramel color brief whitish head. Flavor is subtle but complex - sweet bourbon, vanilla start; a subtle shift to a sour mash middle; with an oaky/charcoal touch to finish -reminiscent of some seasonal winter brews that use spices, but this one is pure brewers art. Light on the palate, but lingering - just ’cause it’s light does’t mean brief. It’s a substantial beer in easy package. UNPLUGGED!
