Commercial Description:
Robust in character yet smooth in delivery, Cabin Fever is a roasty brown ale and a hearty, comforting companion for long, mind-bending winters. Its rye, roast and raisin notes play off a subtle caramel sweetness and culminate in a dry finish. Excellent with roasts, stews, caramelized onions and snowfall.

dark brown, ruby highlights, small quickly disappearing head. sweet malt aroma, perhaps some floral hops. sweet malt flavor, touch of chocolate, creamy caramel. full bodied, sweet finish. not a bad brown ale. not a favorite style of mine. as the beer warms, the chocolate becomes more dominant. bottle donated by rayboy01.

New Holland Cabin Fever pours a dark red-brown with a thinning off white head. Roasted malt, almond, burnt drip coffee. Not a bad ale, but not a personal favorite.

Sample at Christmas Ales & A Christmas Story at Studio 35 on 12/7/08: This beer pours deep brown with a medium thin white head that diminishes quickly. Sticky spots of lacing. Aroma of nuts and molasses along with a malty undertone. Medium body with flavors of malt and dark fruit, as well as some brown sugar and caramel. The finish is sweet and malty with a short fruity aftertaste. Decent overall.

Bottle...pour is a dark, opaque brown with a moderately sized cream head. Nose is caramel malts, toasted malts, cinnamon, nutmeg and some nutty notes. Medium body...very smooth and silky, perfectly carbonated. Flavor is mainly nutty malts, spice, some caramel and chocolate notes and a bit of a subtle hop finish. Great brew, very sessionable.

Deep brown color with a thin head. Nutty and buttery. Strong dark malts. Definitely nutty. Creamy. A little bitter and dry finish. Quite nice.

Nice dark brown color. Aroma of caramel, chocolate,and raisin. Flavor of molasses, chocolate, brown sugar. Well done.

A really dark brown ale. Really dark. Aromas of raisin, chocolate, currant and straw. Tasting confirms the profile and also contributes a nutmeg/cinnamon spicing. Round edges on this beer with a quiet malt chocolate finish.
