Editor’s note: 389 bottles of 37,5 cl made.

Danish: En sur saison variant på 6,5% alk., brygget i Januar 2009 af Shaun E. Hill. Den har lagret i franske Pinot Noir egefade med Brettanomyces i 4 måneder, og ved tapning blev øllen blandet med Drie Fonteinen Lambic 2007 – personligt udvalgt af bryggeren. Resultatet er en unik sur øl med duft af hestedækken, kostald og jord (!), en smag med præg af eg og citrus, og en let tør, frugtig og bitter krop samt en sprød, krydret eftersmag.

English: Saison Lambic Pinot Noir is a sour saison style beer, brewed in January 2009 by Shaun Hill, and after finishing in the tank, the beer was racked into a French oak Pinot Noir barrel and aged in this with Brettanomyces for 4 months. At bottling the beer was blended with a small proportion of 2007 Drie Fonteinen draft lambic that was personally selected by our brewer. The result is a unique, distinctly sour beer with barnyard and earthy aromas, oaky and citrusy flavours, and a light, dry, fruity and bitter palate, ending on a crisp, spicy and lasting note.

Bottle. Hazy golden. Sweet, fruity and obviously sour beer. Very well balanced with an incredible smooth mouthfeel. Complex but shy.

First time I had this was a zip from a glass at Ølbaren in Copenhagen when S. Hill was waving Copenhagen goodbye. I really enjoyed it and are looking forward to taste this one. This one is a botlle from Ølbutikken, Copenhagen. The beer is pretty alive when uncapped, take care. The pour is cloudy and deep yellow with a triumphic white head with rather large bubbles in when fading. Citric and wooden notes dominates the nose with some peaches and hay to back it. The taste is really bitter - really like a pomolo fruit but at the same time the palate and mouthfeel is mild and oily. There is sweet notes and not that many horses locked in stables as I remember. There is both fruit and bitchslaps that tends to be very nice combined. The finish is rather anonymous though

Bottle. Pours hazy golden, the head leaves some lacing. Aroma of wet hay, light spicyness and some petrol. Sourness and winous tartness. Rather well balanced but with complexity.

Bottle, bought @ Nørrebro Bryghus.
Pours lightly hazy golden with a great, staying, small, creamy, white head. Aroma is sweet at first, lightl citric, pepper, oak. Lowish carbonation, super dry mouthfeel. Fantastic flavour, gueuze, oak, zesty green apple. Crisp malts, white pepper. Oaky dry finish. Lovely long, dry pepper finish. Top-notch, really lovely!

Bottle, kindly brought by Jeppe. Oak, peach, raspberry and vinous notes in the aroma. Oaky flavor with raspberry, leather, lemon, grapefruit, melon. Very complex, tasty and tart. Delicious.

375 ml bottle, kindly shared by my beer pal Olav, who bought it at Nørrebro Bryghus. ABV 6.5%. Hazy golden colour, big to moderate white head. Nice fruity aroma with lemony notes. Very acidic and lemony flavour, funky notes.

Bottle at Nørrebro Bryghus. Murkey golden/yellow - white head. Dryness, cactus, barnyard, pee, horsey, light flowery, acid, brett, peppery, mould, earthy, citrus, light sourish, tartness, bitterness, yeast phenols. Nice - but a bit too much saison.

A golden yellow beer with orange hues. Quite hazy. A nice big white head develops and stays on for quite a while. Lots of lacings. There’s lots of barnyard funk in the nose and an interesting mildly spicy saison character beneath it. Notes of grass, barrel and sweet and tart grapes. The smell is actually really good - lively and interesting. Unfortunately, the taste isn’t as good as the smell. Here are some mildly tart lambic flavors of lemon and funky mud which soon make room for sweeter fruity notes of grapes and grapefruit along with notes of wheat and malts. Some clove-like and peppery spicy notes and hints of brett, oak and vanilla. The spiciness leads the way to a gentle hoppy and phenolic bitterness in the finish. I don’t really get this bitterness, and I actually think it’s superfluous. Notes of grass and fruits in the slightly too short finish as well. All in all, the taste is somewhat interesting, but it’s too edgy and unbalanced - it doesn’t manage come together as a whole. The body is light and the carbonation is soft. The texture could have been dryer. Quite and interesting beer, and definitely a fun experiment. But in the end, it doesn’t come out as more than a blend of saison and lambic, the sum isn’t bigger than it’s parts. Bottle.
