Amber golden pour with a thin head. The flavor is mostly malty with english malts, caramel, and some grain followed by a light citrus hop note. Lightly citrus-influenced nose. Light body and carbonation. 8/19/2007: The color of North Fork IPA is deep gold (more like a mixture of yellow and brown) and it is cloudy in appearance. There is a thin white veil on the top surface as well. The "creamy" aroma has pale malts, ginger?, and some herbal hoppiness. This beer has a nice hop profile that produces flavors of light citrus and floral notes. The bitterness is pretty mild which makes this beer taste and seem more like a pale ale than a true IPA.

Pours a very hazy, transluscent, copper-lemon skin-tangerine orange, moderate amount of white head receding to cover, slowly and leaving spotty lacing in its wake. The aroma smells immediately of yeasty b-vitamins, light plastic/solvent-like notes (more yeast bi-products), mixed in with dry white-grapefruit, lemons and a touch of pale malt sugars. Reminds me a lot of Rogue’s integrity IPA. Actually, it just reminds me more of Rogue’s yeast and that general distinct note that their unfiltered beers have. The aroma is very weak overall, though, possibly held back by the high amount of yeast. Anyways, this translates to the flavor as well, yeasty, light plastic (not in a terrible way though), with white dough, touch of white pepper and plenty of lemons, tangerines and grapefruits. Pale grains seem rather husky, especially as it warms and the body comes in to question. Light wateriness, and a very low amount of malt sweetness. Through all of that, it dosent get too dry, just rather hoppy and thin. Bitterness is not over-the-top, and there is no sign of alcohol. Slippery on the tongue at points, while light yeast and grains provide grit.
