There is a foil wrapping around the top of this corked and caged 750ml bottle. I broke quite the sweat trying to pop the cork. I poured this into a tulip. Before the second pour, I swirled the yeast as best I could. The beer is a cloudy marigold, if I am remembering my Crayola 128.
This is quite the smell. The only Saisons I’ve ever had are the Avery 12th Anniversary and Hennepin. This is funky. Scents of lemon and honey are there. The taste is awesome. Upfront, there is a bready quality, followed by lemony citrus hints. The tart, fruity, funky yeast is at the back of the frontside of the taste. It is the middle and it is the end. The mix of sweet and tart flavors is new to me. As I think of all the other Saisons out there for me to try, I just smile.
The mouthfeel is smooth and creamy. It is also thicker than the other Saisons I’ve tried. Granted, those are the two mentioned above. Drinkability is superb. I don’t know the ABV, But it must be low, as I’m almost finished with this bottle. If you live around Indy, find this beer. I’ve got a box ready in the cellar for this one.

| 4.3 | Aroma | Appearance | Flavor | Palate | Overall | | 9/10 | 5/5 | 8/10 | 4/5 | 17/20 | Jan 30, 2007 A beautiful, pale golden color, intense bubbles rising through the body, and a rocky, white head. Aroma was perfect-hoppy, lemony, woody, earthy, white pepper, clove, and a touch of fermentation funk and a solid, hony-like sweetness in the background. A good saison should have an aroma that changes every time you hold the glass to your nose and this one delivers. Flavor is the same as the aroma except that it is slightly less complex, maybe a little too sweet, but a complex restorative none the less. This is a great saison that generates a lot of flavor without being high in alcohol and is not overly dry and austere. A great combination of complexity and drinkability. As it warms there is a beautiful, lactic sourness that the Dupont strain delivers with age and this one is well aged. johntreeter (122), Greenwood, Indiana, USA
| 4 | Aroma | Appearance | Flavor | Palate | Overall | | 9/10 | 3/5 | 7/10 | 4/5 | 17/20 | Oct 22, 2009 7 year old bottle that’s been sitting in the brew office since the day it was bottled. Poured a hazy golden color with a small white head. Aromas of cider and pears, somewhat like a white wine. Flavor was dry and a little fruity, but I believe it had lost some of it’s funk over the years at room temp. Carbonation was great, light ot med body dry in the mouth. What a great treat after a in the brewery. This review is for the first half of the bottle. The second half had some yeast issues. Cletus (5059), Connecticut, USA

| 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 5/5 | 7/10 | 3/5 | 15/20 | Feb 23, 2006 Bottle - a terrific smelling beer! Big and yeasty - as a saison should be - with a coriander finish. Palish yellow body with a lively white - did I say white? - head that just will not go away. Flavor is sweet and yeasty. A touch of lemon and lime hit the sides of the tongue in the finish. I’ve not had a lot of saisons, so my point of reference is limited, but I really enjoyed this beer! | 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 7/10 | 4/5 | 15/20 | Jan 19, 2007 Strong qualities of coriander, citrus, hops with a light yellow coloring. Thin head, but excellent beer. Silphium (2160), Haslett, Michigan, USA
| 3.6 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 7/10 | 3/5 | 14/20 | Dec 19, 2005 Milwaukee YEHa!05, brought by BBB63. Spicy, estery, earthy aroma, with notes of lemon, flower petals, and a touch of clove. Quite hazy yellow-orange body, medium off-white head. Spicy, estery, fruity body with lemon and a hint of pineapple, in addition to bread, crackers, and white grape. On the dry and spicy side of things (i.e., more spice than fruit). The aroma was the best thing about this beer, but I enjoyed everything else too. Maybe I’m simply not the best judge of Saison merit, but I thought this was pretty good stuff.
