Commercial Description:
We dry-hop this American Style India Pale Ale with seven grains and four domestic hop varieties by adding dry whole hops to the finishing tank so the beer rests "on top" of the hops for five extra days! Malty sweetness up front with big cascade and glacier hops in the finish -- a wonderfully drinkable IPA!

Pours a hazy amber with a small off-white head that dissipates to wisps around the top and left a bit of lacing. Smell is a balance of sweet malts and citrus and pine. The hops are dominant but not overdone in the smell. The taste starts with a pop of bitter piney hops with some grapefruit which gives way to the malts before the hops leave a bit of bitterness in the finish. The mouthfeel was medium with good carbonation and nice and sticky with pine resin. The drinkability is pretty high on this and it’s a decent example of an AIPA.

Found this one bottled at Sam’s Wine in Downers Grove, Illinois. A nice copper pour with a thick white head. Pronounced piney hops in the nose. A nice balanced taste early fades into a biting hop flavor. Nice, bitter finish. All in all, a nice, solid and not overdone IPA.

Bottle. Pours copper with a medium white head. Aroma of pine, prunes and sweet malt. Tastes old, kind of musty, grassy, sweet finish, not much bitterness. Not one I would get again.

Pours a golden amber in color. A vigorous pour leads to two inches of bubbly head. Plenty of spotty lacing all over the glass. Smell is mostly all malts, but with a piney hop finish.
Taste is identical to the smell. Very big malt taste up front, then finishes with a piney hop bite. Not overly hopped, but enough in the finish to enjoy. Mostly bitter tasting in the end, moreso than juicy or grassy. Decent beer.

really tasty ipa. has the malty sweet presence of a double ipa, but is a real easy drinker. great hop flavor and aroma.

Amber color. Smell of hops, malt, pine, citrus and brown sugar/caramel. Loved the smell. I could taste some citrus, malt and flowers.

One of the nicer looking pours of IPAs I have had. Nice orange hue with a golden uneven head that leaves a sticky lacing. A big aroma of grapefruit and pine. It is a very smooth beer to drink and is more creamy than oily. This is definitely a very well hopped beer but offers enough malt to offset much of the tartness. Grapefruit, pine, and floral notes. Bitterness is not significant. Hats off to the O’fallon crew!

Yes, an IPA by any other name.......certainly a hoppy experience. Smell of pine and floral hops. Pour is interesting with it’s gunk on the bottom and all. Taste is like any other IPA, may even border on impy IPA territory. Rude crude and difficult to drink. Offensive finish that reminds me of green mouth coating grapefruit rinds. Hangs for quite a while. Right on style!
