Commercial Description:
We dry-hop this American Style India Pale Ale with seven grains and four domestic hop varieties by adding dry whole hops to the finishing tank so the beer rests "on top" of the hops for five extra days! Malty sweetness up front with big cascade and glacier hops in the finish -- a wonderfully drinkable IPA!

Sampled from bottle: poured a cloudy amber colour with a small off white head. Aroma is subtley floral with some wierd iron notes. Biscuity with rich roasted malts on the palate. Hop taste was there but not as full as I was hoping. Nice beer overall. But it could take a lesson from SNPA.

Bottle. Pours a clear amber with off-white head. Aroma is nice, some caramel and pine. Flavor of some caramel, nice pine hop flavor, nice small bitter. Mouth feel is medium body with high carbonation. Over all, and easy drinking, tasty, nicely balanced IPA.

Bonus bottle courtesy of Beerman6686. Pours hazy copper with tall, nearly frothy, tan head. The aroma has caramel and malt sweetness to go along with mild pine hops. The taste feels a bit thick and sweet initially. It quickly fills up with pine hop bitterness that never reaches the point of over shadowing the sweet malts. Nice malt forward brew that thins out into the finish leaving a touch of caramel and a nice layer of pine hop bitterness heading into the after taste.

On Tap 03/24/2009 at Blueberry Hill In the U.City Loop (St. Louis). Orange/amber color. Floral, citrus aroma. Very good tasting with earthy hops, malts. well balanced through the finish. Enjoyed two of these, the 2nd being even more enjoyable. Very good offering of an American IPA - Cheers to O’Fallon!

Hazy golden to amber in color with a big, effervescent head that has thin lacing. Has a very fragrant, floral nose with the slightest hint of pine. Clean, earthy hop flavor is delectable as candy. The finish is fantastic! Like the sweetest grapefruit you’ve ever had, blended with honey and nutmeg. Does taste a tad soapy, however. Tentatively bittered. Exquisitely smooth and drinkable. A tasty blend of citrus and noble hops.

12oz bottle courtesy of dakid618. Pours an attractive hazy dark caramel color with a one finger foamy white head that settles quickly but somewhat laces the glass. Aroma is sweet and floral with notes of citrus, grapefruit, pine, caramel, honey, spice. Flavor is sweet and floral with stronger notes of citrus, grapefruit and hops with some hints of caramel, honey and spice. Generally light to medium body with a pleasing floral hop finish.
