Commercial Description:
We dry-hop this American Style India Pale Ale with seven grains and four domestic hop varieties by adding dry whole hops to the finishing tank so the beer rests "on top" of the hops for five extra days! Malty sweetness up front with big cascade and glacier hops in the finish -- a wonderfully drinkable IPA!

12oz bottle. Thanks to Jeff and Tony and the gang at O’Fallon for getting me this sample! Hazy and grapefruit amber. Sweet citrus and grapefruit aroma. Orangy, spicy and floral aromatic notes. As it warms, the piney hop aromas start to permeate. Initially lively and smooth. Then the dry sticky bitter hop flavors hit. Nice malt backbone with a mild caramel sweetness. It lingers just long enough for it to be truly appreciated. Then the citrusy hop notes come at you. These quickly evolve into the dry, piney hop notes. It all culminates with a long tart, sour hop dryness. While not the strongest IPA, it is still very enjoiable. And I read somewhere in a blog that it’s about time for STL to come out with a year round substantial heavy hopped IPA! I concur and applaud!

12oz. bottle. Fairly fresh, fruity, citric and lightly floral aroma, some faint pine and grapefruit noted. Vibrant medium copper color, clear, with a fine, lasting, creamy head. Flavor is similarly hop-focused, these being clean, bright and citric with touches of spice and and some gentle, sweetly toasted malts. The Cascades really seem to come through on the finish. Palate is slick, drying and perhaps a tad thin, body is light-medium. Highly drinkable.

Cloudy orange color with a huge long lasting beige head. Strong aroma of caramel malts with some lemony citrus hops in the background. Flavor of sweet caramel malts and some citrus hops.

Pours a nice copper amber color, slightly hazy, with a nice amount of foamy white head. Aroma smells like a bowl full of recently cut open grapefruit. Grapefruit completely dominates the entire aroma. Flavor a bit week and watery, though some citrusy hops. Overall, quite drinkable.

Poured a hazy amber color with a small off-white head. Toasty malt with mild citrus hops mixing through. Malty caramel and toast with not much sweetness. Some citrus in the middle and a mildly bitter finish.

Nice hazy orange tinted amber coloured body with a dense tan head - this is exactly how an IPA should look! Aroma of strong hops, grapefruit, yeast, alcohol and the slightest hint of nuts. Medium-bodied; Mild hoppy flavour up front with a good malt backbone then showing some brighter hops near the end. Aftertaste shows a light bitterness, some apricots and a touch of yeast. Overall, a very drinkable and somewhat bittering IPA - not too much hops, but definitely enough to make this a pretty solid IPA. I sampled this twelve ounce bottle purchased from Goebel Liquor in Wichita, Kansas on 24-April-2008.

12oz bottle. Sharp piney honey hops in the nose, with a clean and unmuddled taste. It’s straight hops and little in the way of malt, which is nice, and the hops are moderately bitter honey and pine cones, with a little faint bit of butter thrown in for kicks. Sure, it’s not the best IPA, but it’s made to style and does the job: simple, clean, hoppy.

(Bottle) Pours a lightly hazy amber body with a rocky off-white head. Aroma of citrus, caramel, and some light toastiness. Flavor of citrusy hops, caramel, and florals.
