Floral, citrus aroma. Very good tasting with earthy hops, malts. well balanced through the finish. Enjoyed two of these, the 2nd being even more enjoyable. Citrus/floral/herbal. Poured with a good head, slightly cloudy. Flavor is a bit earthy with hops that follow into a dry finish. This was a delightful IPA that is extremely drinkable. A nice copper pour with a thick white head. Pronounced piney hops in the nose. A nice balanced taste early fades into a biting hop flavor. Nice, bitter finish. Dark copper-golden color with sturdy beige head of large bubbles. Unfiltered, or at least cloudy. Caramel and waffle notes blended nicely with fruity yeast and citrus hops. Background honey and floral hints. Flavor is simple up front, sweet and malty, notes of belgian waffle (belgian waffle?) and simple syrup before good resinous pop of cascade goodness. Mildly unctuous at the end, lingering citrus (grapefruit) pithiness after finish. I was really impressed by this. I had no expectations whatsoever, as I have never really enjoyed the other O’Fallon beers I have had. However, this was a nice piney, resiny, citrusy IPA that, to me, exemplified the style. My only complaint is that the finish was short and the mouthfeel was a tad thin. Granted, I had this right after an Alpha King. Of course, that is also one of the reasons that I think that this beer deserves some attention. The aroma is very hop filled with a bit of citrus. Semi-sweet citrus and hops in the flavor with a nice bitter bite to it.
