Commercial Description:
We dry-hop this American Style India Pale Ale with seven grains and four domestic hop varieties by adding dry whole hops to the finishing tank so the beer rests "on top" of the hops for five extra days! Malty sweetness up front with big cascade and glacier hops in the finish -- a wonderfully drinkable IPA!

From a 12 oz. bottle with no freshness date, "Premiere Edition," sampled at cellar temperature in a pint glass. Poured a hazy orangey copper with a nice frothy, foamy, bubbly topped off-white head, decent retention, small amount of ringed sticking. Right from the start you can tell this has been dry hopped, aromas of dry leafiness with pine resins and citrus rind, a light sweet maltiness in the background. Good, steady carbonation and a crisp, dry, hop slick, creamy smooth medium-light bodied mouthfeel. Nice hoppy taste, a pretty balanced AIPA, pine oil, citrus zest and rind, an underneath sweet caramelized maltiness, just enough to cut the sourness, towards the end a touch of butter, and in the end the dry hops comes out, leading to a dry, softly bitter finish. The hop bitterness is light, but does softly numb the tongue, overall, a good mix of sour hops and sugary, grainy malts. This is now my favorite St. Louis AIPA, I also prefer this to Goose Island, I need to do side by side comparisons with some Michigan and Wisconsin AIPA’s. Also great from the tap.

Bottle. Aroma has notes of resin, pine, citrus, honey. Lovely. Med amber hue with an average sized off-white head that mostly diminished and left good lace. Flavor is sweet then tart and bitter. Palate is light-medium bodied, watery, and lively. A nice average IPA that could session well. Good nose.

Pours red with a tan head. Aroma is all hops. The taste has a surprising ammount of maltiness. The hops show at the edn of the sip. Very drinkable.

Wow. I was really impressed by this. I had no expectations whatsoever, as I have never really enjoyed the other O’Fallon beers I have had. However, this was a nice piney, resiny, citrusy IPA that, to me, exemplified the style. My only complaint is that the finish was short and the mouthfeel was a tad thin. Granted, I had this right after an Alpha King. Of course, that is also one of the reasons that I think that this beer deserves some attention. I expected it to be blown away by the AK, and I found that it had enough backbone to hold its own. Well played sirs.

This was a great IPA. Light copper in pour with a nice big white foamy head. The aroma is very hop filled with a bit of citrus. Semi-sweet citrus and hops in the flavor with a nice bitter bite to it.

Pours amber with a big white head. hoppy, pine, grapefruit, etc for both. Easy going down, nice bitterness. I’d like to talk about it more but I’m busy drinking it. Sessionable and I’m in that kind of mood.

12oz bottle served in a shaker pint. Appeared to be bottle conditioned. Poured an orangish gold with a thin fine bubbled head. Nice citrus hop aroma along with some caramel, toffee malt. Definitely on the malty side of the spectrum. Medium bodied with decent amount of carbonation. Good amount of hop bitterness that really shows in the finish. The hops are fairly drying in the finish. This isn’t a hop blockbuster, but very drinkable. Another example of why good, fresh, local beer rocks.

Light to medium copper color, thin yet lasting white head. A mostly hoppy aroma. Lots of pine, grapefruit, fresh cut grass and carmelized sugars. A medium bodied IPA with a good hoppy bite and slightly bitter finish.
