Commercial Description:
It is a non-traditional bock brewed with our house Kolsch yeast and fermented cold.It’s brewed with 8 different malts and 2 hops. It’s a deep ruby red with a big malt aroma and flavor.

Bottle. Pours a dark amber red. Smells of malts and sweetness. Tastes like caramel and other roasted flavors. Pretty weak on the flavor. Very smooth and drinkable.

Dark brown with lots of red. Nice tan head lasts a couple of minutes leaving only the faintest ring. Sweet aroma is full of malt. Both roasted and caramel malt fill the nose. Hops are noticed but are dominated by the malt, especially caramel. Dark cherry and some wood flavors. Alcohol provides a warming effect. Interesting beer in that all of those flavors sound great but just don’t quite work together. Not a bad beer but a bit of a disappointment.

12oz bottle. Poured a a deeper and muddy amberish color wtih a small sized off white head. Aromas of toasted grains, caramel, light chocolate, and bready. Tastes of toasted malts, caramle, nutty, an dsome brown sugar sweetness.

Bottle. Poured a clear reddish brown with faint wispy off-white head. Sweet rich malt aroma. Flavor is rather potent, malt with a sweet chocolate character. Thin in the mouth with a dry finish.

Ruby red with quickly diminishing beige head. Aroma of caramel, toasted malts, bread and light fruit. Heavily malted smooth body tasting of caramel, sweet malts, light fruit. A little on the sweet side and very lightly carbonated.

12oz Bottle Recieved this in a trade with Vancer a while back, thanks again Vance! Goat’s Breath pours a deep cherrywood with a glass full of large quickly rising carbonation. A sudsy fingers worth of off white head formed on the pour but quickly fell to a very thin skimming. With the small amount of head left it’s hard to get any lacing. The body looks really good, unfortunately the head doesn’t match up. A sweetened nutty breadiness greets the nose right away. A light drizzling of caramel and toasted grains create a solid background. There’s a syrupy sweetness deep in the aroma that’s not quite maple syrup like but is along those lines. A little different then your usual bock but there’s enough bready, nutty, and sweetness to keep it close. Flavor follows the nose closely. Caramel sweetness starts things off before a sweet nutty breadiness takes over. Alcohol spiciness joins in mid-palate and and lasts throughout actually adding some dryness on the finish. The caramel shows up again just before the swallow to go down with the ship. Goat’s Breath is a decent bock. Mouthfeel could use a touch more heft but I’m being picky and I tend to think that about a lot of bocks. Medium body that feels slightly watery on the sides of the tongue. The carbonation looks lively but doesn’t show up much on the tongue. Finishes drier then expected. This is an easy bock to put away. If I had a couple more bottles I would enjoy them tonight. The body keeps it easy drinking, the dryness I’m still on the fence about. O’Fallon brews some good beers and some not so good beers. Goat’s Breath is in the middle of the two. A decent beer that I would maybe pick up every now and then but not too often. I guess I’m on the fence about this whole beer. It is a decent bock though and I wouldn’t hesitate to turn one down. 5/9/08

Bottle from Party Source. Poured clear deep brown with an average frothy off-white head that mostly lasted with good lacing. Good complex toasted malty aroma. Medium to full body with soft carbonation. Moderate balanced malty sweet flavor with a medium sweet finish of moderate duration. Good drinkable brew.
