Commercial Description:
An Ølfabrikken guest brew. For the third time we have invited one of our colleagues to come by and do any brew he or she would like. Gunnhild Kolvereid Brewmaster at Brewpub Copenhagen has made a sour brown ale brewed with a normal Belgian ale yeast as well as brettanomyces, pediococcus and lactic acid bacteria. The beer has been matured on french oak and sour cherries and bottle conditioned for six moths before release. It is bottled with brettanomyzes which provides the beer with a nice sparkle underscoring the refreshing sourness. Unpasteurized, unfiltered and bottle conditioned like all of our beers.

Draft. A muddy dark red beer with a thick orange head. The aroma is sweet and acidic with notes of wood and fruit as well as light notes of brettanomyces. The flavor is sweet and acidic with strong notes of fruit and over ripe cherries, leading to a woody finish.

(On tap) Hazy, reddish amber colour with an off-white head. Acidic fruit aroma. Medium body with a fairly high carbonation. Fruity, acidic and very fresh cherry flavours. The finish is tart but not overly so. Nice. 110507

CBF07 sample from tap. Pours with a huge head, only slight pink. Beer is hazy brown/pink. Aroma is cherries and sour. Flavour is slight malty sweet and sour. Finish is bitter and sour. Nice brew, I guess I had my expectations too high for this.

Draught at Københavnske Øldage. Cloudy reddish brown, firm beige head. Heavily citric nose. Light bodied with spritzy mouthfeel. Almost sharp mily sourness dominates. Lightly woody with some sweet cherries. Refreshing, but really sour. A light touchh of metal in the finish. Very interesting, but I’d like to see it less spritzy and more firm.

Bottle @ Københavnske Øldage 2007 in Copenhagen. Hazy red / lilla color with a virtually none head. Aroma is cherry, sourness. Initail flavor is moderate sweet and acidic, finish flavor is light sweet and acidic with a average duration. Body is medium, texture is watery, carbonation is flat to soft.

Draught at KØ07. Muddy prune colour, no head. Very weak prune aroma. OK fruit flavour, quite sour, also with an aftersourness and blood/metal aftertaste.

Draught. Hazy orange brown coloured with an off white head. Light acidic aroma of berries, wood and spices. Light acidic flavour of wood, vanilla and berries with notes of lactic acid.

Cloudy dark amber color. Both the aroma, and even more the taste, show some infection, more likely than a wanted sourness.
