Liquid is translucent reddish brown, unfiltered; head was tan and well carbonated. Tart apples, raisins, white grape and biscuit were all part of the flavor. The aroma has lots of brett funk, some nectar fruit, spices, graininess and hints of citrus - very clean and refreshing. Medium / light body with an abundance of prickly carbonation. The flavor starts out with much of what is in the aroma and has a very saison taste to it. There is a great melding of the graininess, spice and fruitiness. The finish is peppery, clean and refreshing. The is a fantastic beer. I’d say this belongs in the Belgian ale or saison category, but no matter what it is worth trying. Aromas of grass, herbs, hopsack and barn/attic dust. Berries and caramel gradually overtake and dominate the scents. Dry start, and actually quite dry throughout. Some light caramel and apricot flavors float about, but are not thick or overpowering. Light toasted malt noticed in the middle. Airy, yet some degree of stickiness. Mild dark fruit in the finish and into the linger. Some dubbel qualities. I think this is just starting to hit its own stride. Seems to be drying out and still has not gained a great deal of funk. Moderate aromas all around, with light bread and caramel for the malt, orange for the hops, musty basement for the yeast, and background notes of sauteed plantains, pineapple, white wine and oak wood. Head is fizzy, white with some slippery lacing and is almost fully diminishing. Color is hazy orange/tan with an average amount of large particles. Flavor starts moderately acidic and finishes moderately bitter. Palate is like Champagne, light, watery and has a fizzy carbonation. Impressive looking bottle, and none of the floaters/sediment that everyone else had (although we never hit the bottom of the bottle due to drunkenness).
