Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Bottle thanks to blutt59. The look is clear golden in color with a light white head. The smell is tart, malts, little brett, earthy, spices, and fruit. The taste is malts, fruits, yeast, spices. Dry.

Bottle. Nose-dog food, muted, dog, cottony, light white spices, very good despite the oddness. Not a lot of funk, low hops, sticky, sweetens as it warms, perfect mix of dryness, fruit, and brett. Excellent.

(750ml bottle, batch #2, courtesy of blutt59) Pours a clear yellow body with a small white head. Aroma of ginger, citrus, grass, earthiness, and lemon. Flavor of yeast, ginger, grass, light citrus, and some pepper.

Bottle thanks to blutt59. Pours a cloudy yellow with white head. Aroma of brett, farmhouse. Flavor of brett, lemon, some good stuff so far. mouthfeel is light-med. body with high carbonation. Overall, good shit!

bottle from batch 2 thanks to blutt59. pale yellow pour with a thin white head. nice sour/tart nose. flavors of spices, funk, barnyard honey and earth and the list keeps going. I need a bottle of this to call my own.

A cloudy, golden beer with a bright, effervescent head. Smells strongly of coriander, ginger and leather. It suggests an intensely spiced, sour beer. The aroma is so potent it clears the nostrils, an effect not unlike breathing in steam off of hot tea. The Brett yeast is very pronounced, almost undesirably so. Some sweetness comes through suggesting the strength of this beer. Earthy, spicy hop undertone with a moderately dry finish. Tart with a hint of bitterness but not sour. A very interesting and unsual beer.

This is a nice saison ale that is smooth on the palate. It has a mellow, but sour, lemon flavoring. Dry aftertaste.
