Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Batch #1 bottle shared by Blake. Slightly hazy golden body under a foamy macro-looking head. Sweet, perfumy aroma - reminds me of Bam Bier. The flavor really kicks in with strong woody hops and a dulled orange rind. The beer could stand to be dried out some more but otherwise a flavorful & enjoyable saison.

Bottle: Damn, all I can say is what a disappointment...where’s the brett and funk? Murky gold with a sizeable white head. Notes of belgian yeast, mild orange zest, pepper and hay. Mildly dry body and mouth feel leads to pale malts, citrus and an underwhelming farmhouse quality. What a shame, I can’t figure out why the brett hasn’t come through on this.

1st Batch. Light yellow/gold color, with a full, lasting, frothy foam. Bottle conditioned. Bretta nose, with loads of lemon and funk. Flavor has mainly been taken over by the Brettanomyces and is quite sour. Notes of fruits (peaches, nectarines, mango) with a pleasant sourness and low acidity. Nicely balanced and really quite good.

Light tan color. Aromas of bready yeast, ginger hops, and sweet malt. Flavor is very well balanced, with candied ginger, spicy hops, and a finish that starts off rather sweet and ends with refreshing bitter hops. Very smooth, and the alcohol is indeed well concealed. A fine beer.

I wish I liked this beer more, but I just don’t love it. The ginger comes through quite distinctly but the Brett funk is a bit MIA. Easy drinking, at least.

Overall this is a good saison. It pours a golden yellow with a largem energetic frothy white head and has an aroma of tangy spices. It tastes slightly sweet at first sip, then quickly dries out and leaves a slightly astringent finish that vanishes after a bit. I can taste ginger, herbs, spices, and the finish is reminiscent of chardonnay.

Pours golden with thin white head. Nice aroma of slight funkiness and spices. Spices noted at first sip. Clean taste. Dry finish and very, very refreshing. Great beer.

i stupidly took the cage off the bottle then thought id let it warm for another 5 minutes. the cork flew out when i was in the other room but luckily very little brew was lost. as that illustrates, this is well/perfectly carbonated. i didnt know this would even be saison-like when i bought it but its a wonderful surprise. i drink hennepin all the time but this stuff kind of makes it obsolete. there is just no way this is 8%, its not present at all. perfectly spicy and very yeasty. its nice to have (what i consider) a traiditional saison with brett flavor and a strong ABV. the more you let this breathe, the more the brett comes out of the woodwork. considerably mild keeping the dry hopping in mind, this is very drinkable. i cant imagine how much better this would be if it was aged even for a short time. the neck label on mine says july 2007 and this is just about perfect. in the end, there is so much damn brett in this it becomes a bit one dimensional.
