Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

750 ml bottle purchased at Ommegang during BCTC. Pours a clear gold with a large frothy bright white head. The funkiness from the Brett in this one just isn’t working for me. The funk in the aroma reminds me of cheap public bathroom soap and has a lemon zest about it. Flavor of lemon pledge with a dry aftertaste. Ommegang swings and it’s a miss.

Hazy straw color with thin white head. Aroma of light esters, banana, clove. I know I should have sat on this to let the brett come out, but I couldn’t. Flavor is mild and only slightly funky. Actually a nice sipping beer. The alcohol is well hidden. Decent beer.

Pours a hazy yellow color with a medium fluffy white head. Aroma is lightly citrus and yeasty. Taste is about the same. It’s missing a lot of the funk and citrus varietals. Seems more like a Belgian Tripel or Strong than a Saison.

wow I was really disapointed by this beer.......just average nose and not really alot of flavor in general....it sucks compared to the dupont’s and the bret flavor does not even come out until it gets to room temp......I did not finish the bottle

Pours out a hazy yellow color wuth lots of yeast paticulate floating about. head is medium size and off white in color. Aroma is light citrus, barnyard, and misc fruit. Taste is much the same, however, the fruitiness is way too subtle compared to the brett. This beer is good, but a bit lopsided.

Bottle at home - thanks to Mikkel for bringing this back to DK. Cloudy yellow/orange - white head. Citrus, orange fruity, yeasty, licorice yeasty, light spicy, a bit earthy, light light dusty. Fresh !!!

Bottle batch 1, June 2007. Peppery sour and soapy aroma along with some yeasty bread. Cloudy yellow body with bid white or average head depending on pour. Decent lacing left on glass. Flavor is more toward the yeasty bread side with some soapy mild zest and mild pepper bitering. Easy on the palate good session brew.

Pours a hazy orangish yellow with big off white head. Funky brett aroma with some citrus and bread dough. Light wheat, grassy and earthy flavors with slighy sourness. Light to medium body with lively carbonation. Crisp and dry with hardly any aftertaste. Very refreshing, goes down real easy.
