Had this one sitting for 6 months now to let the Brett do its thing, and boy it sure is. Nice pour on this, light gold with a dense cloud in the body and a tall white head. Spicy, sour, cheesy, wild aroma. Notes of hay, sharp cheddar, lemons. Very complex and pleasing. The flavor reflects much the same with a little more citrus character. Carbonation is sparkling, certainly, but not over active. There is a continuous sour fruit/sharp cheddar thing throughout and spices come through. Nice stuff with the bacteria qualities.

Bottle provided by BossHossBikes again. So, this is the same batch I’ve had prior, just with quite a bit more age on it. Smells really cheesy indeed. Peppers, funk, straw, blue cheese. Carbonation is quite lively, however, the palate is still somehow creamy. Cheese is all over the flavor with pleasant tartness and delicate spices. The finish has a lot of floral stuff going on. Pours hazy slight yellow, sparkling, average fizzy, white head, lasting with fair lacing. Aroma is heavy malt (grain, hay, straw, cereal), average hops (flowers, herbs), heavy yeast (horse blanket, musty, earth) with notes of grape, apple, pear, medicine, and bandage - gotta love the brett! Aroma has some citric sourness, yeast, and graininess. Flavor has some ligthly funky-sour brettiness with light herbs, orange, and some light acidity. Nice mouthfeel. This one is tough to rate as its not as funky/sour as I had hoped despite the time on it - I actually remembered it being more sour in the fall. Pours hazy straw yellow with a small white head, fizzy and diminishing. Nose is funktastic. Apple and vinegar, pear and slight malt. Light malt with funky Brett-tasticness. Dry and absolutely awesome. This is a crazy taste that is tough to describe. Apple vinegar and citrus. I guess I tried anyway. Good stuff. Would be great on the back porch in the summer, but did just fine in the dead of winter.
