Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Bottle at the second Doubletree tasting, provided by theisti. Thanks for helping me get this one off my wants list! Pours a cloudy yellow with an aroma of zesty lime and citrus flower. Flavor is Spring grass with dew and a touch of lemon. Full mouthfeel. Awesome saison.

Hazy and gold with frothy white head plus some spotty lacing. Citrus and grapes on the nose almost wine like. Grapefruit , biscuits, grapes, wood. Mild brett flavor that imo is just starting to show

Bottled. Thanks to omhper. Cloudy golden with a fluffy white foam. Mild bretty aroma with notes of lemon-zest, wood, grapes and minerals. Medium-bodied leading to weak. Dryish flavour of mild breatt, grapefruit, cookies, white bread with a peppery finish. A bit tame in comparison to the others brett monster we’ve sampled during this particular tasting.

Bottled, thanks kmweaver! Pours muddy golden with airy head. Sweaty, lightky citric yeasty nose. Lightly fruit with medium body, some fresh hops mixes with a light touch of Brett acidity. Slimmer and more drinkable than I’d expect an 8% beer to be, yet complex. The funky character drowns a little bit in fruit and yeast though.

Shared by Ed (AKA DoughBoy) at Steve’s house. Poured from 750 ml bottle, yellowy and white. Aroma of biscuits & yeast, hops and brown candied sugar. The beer has a somewhat bitter, spiced flavour with a particular hoppy character. A well made saison. Would love to try on tap.

Batch 1. Courtesy of Juart. Shared w/ Nate and Juart. 1 1/2 finger white foamy head. Straw golden color with a lot of carbonation. Lots of brettyness in the nose. A little bit of spice, but mostly good sauerkraut/rye funk. aroma. Excellent sour flavor but there is a great underlying citrus. Very complex and I would love to see what this would be like in a few years.

Bottle at the Laid Back Brussels Tasting (Feb 9, 2008)
Hazy, yellow body. Rocky, creamy head. Good lace. Aroma is strong on the hops with some malts. (Also some hints of bretts.) Heavily bitter flavour of hops. Quite plain, 1D flavour of hops, which is quite enjoyable. Not boring, but not great either.

Pours a pale yellow color. Poured a big, carbonated, fizzy liquid but all of that dissipated pretty quickly into a thin off white head. Aroma is first of yeast, then you notice a little citrus hops back there. The alcohol is hid well and not done by throwing a bunch of dixie crystal sugar in there. Slight and pleasant sweetness. Crisp dry finish. Spicy citrus flavor. A nice beer all around. I held on to this for a while after it first came out since the reviews were so terrible. Wish I had one back then to compare it to.
