Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

On tap at The Happy Gnome. Looks great with a cloudy golden color with a nice thick white foamy top. It was at the time I rated it, very muddled and there was nothing to really distinguish it as a saison. Very much a letdown as it was very pricey. I have a bottle that I will rate soon.

Draft at SL. The pour was light orange to golden-amber, nice initial head, good lacing. The aroma was earthy, lightly grassy, fruity bretty, and a touch yeasty. The flavor followed the aroma, but the spiced ginger type elements were detectable and for me ginger normally doesn’t work. It was no different here, and when combined with the watered down flavor weakness (I need more body, more robustness), it was just mediocre, especially for this level of ABV. Gimme more, more in the beer! Certainly drinkable, but I’m hoping for more out of the two bottles I’ve got sitting in the cellar. Re-rate, 5/08 from bottle: A different experience, a bit more straight forward. Not as spicey, earthy, grassy and fruity notes still present. It still needed more malt depth and body, but a few notches up in overall likeability.

Cuvée 2007, Batch #1. Bouteille de 750ml, avec bouchon de liège, partagée avec MartinT, Rastacouere, Cathschlag et Beerbuzzmontreal. Arôme: Odeur d’houblons et d’épices avec une pointe de foin. Apparence: La couleur est blonde orangée voilée. Présence d’une fine dentelle sur le verre. Saveur: Goût d’épices avec une pointe d’orange et de levures. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement huileuse. Faible effervescence en bouche. Légère présence d’épices en arrière goût. (Rating #1461)

very interestng beer. Aroma is funk hops. The bret is there, but subtle, and the hops are funked, with a touch of saison pepperiness. Flavour is a tad sour, and has a nice hop crispness. The finish lingers a little sour, and slightly hopps with some notes of citrus hanging on. Very interesting. I like it alot!

i rated this low because it apparently hasnt become the beer its meant to be. i will rerate it eventually. ive had the beer for over 6 months...and still no signs of brett. honestly, i couldve poured this side by side with hennepin and i wouldnt have known the difference. ill rerate the other bottle in a year or so.

Draft from the Thirsty Monk in Asheville, NC. Definitely funky as described. was light yellow with a huge rocky head that lasted. The aroma was of wetness... earthy I guess... funky... Lots of yeast underneath though. Hoppy on the swallow, with notes of sour citrus. Good for what it is, but I could see where some people might reject this one as bad...

bottle poured at 1/28 Houston tasting. Pours a cloudy light amber with a thin white head which dissipated quickly. The smell is of yeast and some spices. Taste is very yeasty with straw/barnyard funk. Mouthfeel is bretty and dry, dry, dry.

Bottle. Pale yellow, hazy, medium white head, some lacing. Aroma is yeasty, citrus, spice, some floral hops, orange peel. Flavor is more spicy, light palate for an uber beer, dry finish.
