Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Cloudy and light golden in color this beer poured a tight 1" head that dissipated slowly. The nose was filled with scents of baking spices, ripe citrus fruits (mango, papaya, guava) and just a touch of bretty funk. In the mouth the beer was light to medium-bodied, dry and a bit tart but had a very nice mouthfeel with good richness. The flavors were similar to those of the nose with the fruit not appearing as ripe. The palate had a nice bitterness making it a great summer beer that would be perfect on a hot day.

Bomber opened to celebrate New Years. Big, super-long-lasting foamy white head on top of a cloudy orange beer. Smells of lemons, bananas, and dough. The taste is very crisp with a lot of citrus and yeast followed by a strong, but not overpowering, sourness. The high alcohol content gives it a bit of a spicy finish. Excellently drinkable, unique, and tasty.

Pours a cloudy light orange color with a medium, foamy off white head. Smells of some orange citrus, funk, acidity, and yeast. The flavor has definitely gotten some funk from the brett, but not as much as you might think. Has a pretty good little bite to it though. Alot of different spices, along with some acidiccitrus fruits blend together to formulate its flavor characters. Pretty decent drinking saison. Not sure what this will do with more time on it.

Bottle. Pours a pale straw yellow color with a white head. Aroma of slight fruit/citrus with a malt aroma lurking. Flavor is very good, but not right on. It either needed to be a little spicier or more sour. It, while very flavorful, just doesn’t hit the nail right on the head. I expected more from the "Brett".

Pours a burnt yellow color with a flimsy white head. High marks for appearance are more from originality than asthetics (as are most of my high marks for this beer). Sells of lemon, and orange hard candy. Sweet fruity malt flavor then balanced by the hops and a tiny bit of spice. I find the palate superb. Has a different mouth feel than any beer I have tried. Highly drinkable.

purchased at 99 bottles in federal way, washington. pours a clear yellow with a large white head, good lacing. smell is pear, apple, some citrus, a little yeast. taste is metallic, fruit, some lemon, light on the hops, some spice.

Damn, damn damn.. opened it too early. While I figured this may lay down better, it was too tempting to open. It definitely shows that it is a young beer. Light sweetness on the tongue and some yeast seems to linger as well in a bready character. I would want just a bit more carbonation as this poured and sat very flat. It had a medium body to the mouth, not too thin, not too thick. I wasn’t picking up on the spices here, so it may need to mellow for the character to come through. Also for 8%, it didn’t feel like it. I’d probably come back for a second rating after letting this one lay down for a year or so. (Bottle Pour 1/2/2008)

Jesse, you rock amigo. You brought this back from Vegas, among others, and I do appreesh. Batch 1, 2007. I’m drinking this right on the six month mark as suggested. Funkhouse is the word man. Ommegeddon pours a hazed, pale yellow color with an explosive cloud of froth that sits there like a nuclear winter. Clinging to the walls of my goblet like survivors clinging to the threads of life, the mushroom cloud finally reduces to a thick, fluffy canopy that lingers forever like scartissue. Strong Belgian aromas including seltzer and a punch of brett in the forground. I can smell it coming. Medium nectar with ample residual effers creating an expansive, creamy sensation. Nice! Going down this brew is totally approachable although strong and hearty. It’s dry and bitter with a defined souring that seemingly dissappears just as fast as it shows up. The thing is is that the souring leaves remnants like memories of days gone by floating around my palate. This is an amazing effect. The powerfull bittering component wipes away all living flesh laying the ground work for nuances of citrus, green apples and peaches, herbs, spice, and musty cave flavors to flourish. The finish is bittered executively clean leaving me ready for another sip. Overall: the peachpit bittering kills the brett effect very rapidly not allowing it time to set in and cloud the palate but it does lend just enough leniency to allow it’s impression on the user. Good stuff. Highly recommended.
