Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Bottle: Cloudy straw, large bubbley white head, spotty lacing.   Tart nose, seems oakish, slightly floral but not as much as one would think for a Saison.   Minor Brett on the tongue, funky, some basement, but not as fruity, dry, or tart as one would expect.   For the price this one was sure a letdown.   Falls flat, with only a minor tartness that lingers.   Average body and mouthfeel.   Not bright, instead bretty, but rather dull.   Needs to be sharper, more floral, with a bit of a BANG.   It only has a little sting.   Decent, but certainly not worth the price.

Batch #1, June 2007. Hazy straw body, medium-thick off-white head. Herbal, peppery, spicy nose with floral notes (potpourri), light fruit, and just a hint of sour funk. Rather dry, spicy body, with bretty notes just starting to show in a light wispy tartness around the edges. Bitter finish. Alcohol somewhat obtrusive and hot. Sharp bite in the finish. We’ll see if it improves much over time.

Bottle: Hazy pour, frothy head, golden orange colour. Apples come through in the flavour right away. A definite veg. and a particular hint of floral hops with pilsner. Finish is too light at start, and has too much aftertaste to finish. almost watery to a point where you can drink this too quickly to purely enjoy what it’s about. After it warmed up a bit this one became a much more enjoyable drink.

Saw this on tap and had to give it a shot. Looks cloudy golden orange with a nice offwhite head. Smells of pine, spice, some hops, citrus, cloves. Tastes tart, has earth tones, some hops, very floral. Delicous fruit, kind of reminds me of Fin Du Monde. Feels full and foamy, finishes a little dry. Tasty brew, especially on tap. I wont seek it out but I def wont turn away from it.

750ml. bottle from Metcalf Discount Liquor in OP, KS. Pour is mostly clear (just faint haze) pale yellow with a bunch of carbonation and a big, loose white head. Aroma of nice earthiness and yeast. I did not get too much of the Brett initially. Despite being quite earthy, this also very fresh smelling, some hay in the nose. Taste is very nice, beautiful Saison body, with a the Brett creating some pleasant sharpness beautifully integrated around the edges. Mid to light body makes this very drinkable. This is a very nice beer, and goes down far too easy. Will need to save the other bottle to enjoy with food.

750mL bottle purchased at Ledger’s Liquors in Concord, CA. June 2007 Batch aged about 6-7 months. Estery, slightly banana aromas with some citrus, lemony notes as well. There is definitely some Bretty funk that is underlying. More of a tart, acetic aroma. Mild to moderately hazy golden body with a moderate white head that is pretty strong. Nice, small, bubbly lacing present. A bit tart, fruity, and sour to start. Some brett notes are definitely there, but not as sour or as acetic as I remember it being when I had this at BCTC a couple of years ago. This brew is quite dry and rather hoppy with what appears to be a dry, spicy noble hop. Probably Saaz. A little metallic twang at the end. This is pretty good, but lacks the sharpness I remember it having. Perhaps this would do better with a few more months on it.

June 2007 batch, aged 7 months. Pours a very lightly hazy, pale golden-blond body. A small, frothy, white head leaves behind thin ribbons of lacing. Dry Brett is fully detectable on the nose, and it is accompanied by an array of citrusy scents, including a soft lemon chiffon, as well as coriander. It smells very crisp, and the flavor repeats that sentiment. Up front, it tastes dry and sharp, with lemons and oranges adding fruity overtones to a mildly funky farmhouse backdrop. Brett has definitely dried this one out a bit, though it has probably reached its peak at 7 months. As well balanced as it is, I can see additional dryness adding any redeeming qualities. This medium bodied, smooth brew finishes long, dry and bitter. Solid effort from a solid brewery.

Saved this til is was just over 6 months old, so I could feel that full funk flava. Light gold with a nice white head. Aroma is slightly spicey, light hoppiness, a light funk in the background. Taste is mildly alcoholic, with the nutmeg, and very light funk showing; pale malts also show with a light sweetness along with a fair hop punch.
