Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Thanks to Chuck for bringing this! Poured a hazy, banana-ey yellow with a short, loose cap of white head. The aroma picked up sweet, darker pale malts with light fruits and some warm, medium-intensity spices.. not a lot of Brett influence. The flavor had sticky, lighter and medium-skinned fruits along with some toffee and dusty, yeasty notes at the core.. warm toffee and lighter fruit notes at the back, with a little more Brett funk (but still not much). Medium-bodied with light funk and a long, lingering sour and sharp fruity finish. OK.

Bottle. I’ve actually had this a few time now and the bottles seem to be aging quite differently. This bottle has been stored at room temp up until about 2 months ago when I put it in my 55 degree cellar. Very pale, yet murky, yellow color. Big, frothy white head. Phenolic yeast aromas with some ginger notes. Although I could smell brett when I opened the bottle, I cannot pick it up with the glass under my nose. Malty and ginger flavors. Notes of oranges and lemongrass. Some slight spice. You’d never guess this beer was 8%.

Bottle. Batch 1. First whiff was all brett (Thank God it is finally ready!), citrus, flowers, and some black pepper. Initial taste is orange blossom honey & wet wool horseblanket then comes the candi sugar, light biscut, alcohol, and barnyard. I have had 3 bottles of this first vintage to date and it seems like it is nearly bone dry already.

Bottle. Musty barnyard and lemon aroma. Cloudy pale yellow with giant head. Sweet-sour lemon and light musty-dry flavor. Mild citrus hops finish. Very nice, easy drinking beer - a bit light on flavor and body though.

Notes: Vibrant, almost neon peach color with a small white head. Ultra hazy and incredible lacing. Fruity aroma. Conglomeration of lemons, berries. Yeast after tone. Sweet, smelly, and bitter. Didn’t expect the flavor. Almost candy-like. Exotic. Pleasant aftertaste. Silky palate at first, but becomes extremely dry and bitter. Makes my mouth tingle. Very different kind of beer. Yeast leaves an impression, but the dry-hopping carries it through.

From bottle, no 26 at Papsoes blindtasting. Pours hazy yellow and with a lacing white head. Grainy to grassy aroma, slight spiced. Fresh fruity and hoppy flavour, slight spiced. Ends spiced and mildly soapy.

My saison reviews always seem to go about the same. Never seem to have enough flavor. Straw colored and a little hazy, kind of leaves a wierd taste behind. I think its just a little bit too sweet for me, but my buddy loved it so its probably just a matter of taste.

Pours a lightly hazy golden yellow with a decent head that fades fairly quickly down to a ring. Aroma had a note of spice, some pale malts, a touch of something floral, and a nice bit of leather that seemed to be the focal point. The brett in my bottle appears to be making its presence known. Flavor was very much in line with the aroma at first. As it warmed, the leathery notes gave way to a herbal and slightly fruity flavor with a fairly dry and quite bitter finish. Need to pick up another bottle or two of this and forget about them. Very enjoyable.
