Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

From bottle@Københavnske Øldage 2009. Clear gold colored, firm white head. A pleasant, lightly spiced fruit aroma with a scent of mealy and doughy malts, barnyard and cellar. Taste is fresh malty, sourish fruity and funky, the Brettanomyces is doing its job indeed. Notes citrus zest and berries. A fine, fresh hop bitterness in the backbone. Slight astringent mouthfeel. Dry, bretty, lightly spiced ending. Highly refreshing, top drinkability. What a nice one!

Bottle, 75cl corked, at Copenhagen Beerfestival. It pours an unclear, golden body under a small, white head. Bretty nose with citrus, pale malts and a spiced touch. Pale malts, spice notes, bretty funk, some lemon and alcohol makes a nice flavor, leading to a bitter finish with fruits and some brett. Dry, almost dusty mouthfeel, slightly astringent and warming. A lovely one, quenching and refreshing as hell. (090516)

Two year old 750. Cloudy, golden orange with a nice fluffy head. Subtle, funky aroma. Light and balanced with lemon, tangerine, pear, apricot, and cherries in a smooth, sour, grassy concoction. Age performs wonders.

The aroma is of sweet fruits, citrus, some cherry. Flavor is a little bit less interesting, sweet fruits. Not bad.

Bottle courtesy of fun-haver (gunhaver). This batch 1 brew pours hazy apricot with almost no head. The aroma is fruity with pears, smooth ripe cherries, boysenberries and a bit of tart and funk. The taste is fruity with apples, berries, faint tartness and a sense of earthy funkiness. Nice.

Hazed orange pour and a foamy white head. Sweet acidic lemon aroma. Taste is a bit toned down from the aroma not quite having as much sour aspects to it; but is somewhat tart. Very crisp beer with a clean finish.

750ml bottle that is well over a year old, was there only one bottling of this? Holy hell... watch your face when opening. I barely had the cage off when the cork exploded at high velocity and knocked paint off the ceiling. Pours a slightly hazy glowing yellow gold with a big white rocky foamy head. Aroma is lightly sweet fruity and botanical, touches of brett and alcohol. Flavor follows aroma, lightly sweet cereal, just a touch sour and spicy, either from the ginger, brett or both, alcohol sometimes detectable, very dry bitter hop finish. Medium/light bodied with corse uniform smaller carbonation, slightly milky.

Tasting thanks to Butter 3rd Cellar Reduction. Bring the funk. Tart lemon juice. Fresh ginger. Much better the last time I had it. This bottle is about a year old. So maybe some bottle age helps. Its really rounded out. Much better balance. It gone from a no to a recommendation in my book.
