Bottle: Light beige color with a fizzy but non-retentive head. The nose is light and fruity, very subtle for a sake, usually you expect a little fruitiness or earthy qualities on one side or the other. This was just vague and light in the nose department, even knowing it was a full strength carbonated sake, which is rare. The flavor has a nice sweet snap along with the carbonation and alcohol components. Missing some umami, but the acidity is low and it has a nice impact and finish that makes it remarkably drinkable. I’m surprised such a new and small sake brewery can control its rice and koji this well. It’s very clean, but I think this sake is a good example of why adding brewer’s alcohol is not always a bad thing.
