Sour aroma with some apple mixed in. A pretty nice big body for a lambic in the beginning, quite tart with fruity notes. Definite sherry aroma, notes of peach, apple. Very sour. Nice and full up front, tart but with malty fruit, then disappears into acetic, barnyardy sourness. Pretty solid. Cork escaped with the slighted nudge, but thankfully, no gushing followed. Slightly hazy copper, big clean white cap of velvety foam. Huge aroma volume--could smell this one loud and clear while pouring at arms’ length. First layer of aroma is quite soft and grassy, with touches of vanilla and mellon. A deeper sniff brings more of the funk: army surplus wool blankets, cats, compost. Gently sour grapefruit flavor, with a nice briney pepper bite and a lingering lemon finish. One inch thick true white head that has no intention of leaving. Mad carbonation, this beauty is lively. Funky fruity aroma, fermented peaches and pears with mild banana and some very noticeable tart yeast scents. The mouth feel is sparkling and bubbly at first, but immediately becomes sour. The initial sensations soon vanish into a wonderful dry tartness. Flavor is lightly complex. Fermented musty malt accompanied by tart citrus. Teasingly sweet them bam! A smack of sourness hits you, which is surprisingly crisp. I also picked up on a hint of celery along with many other earthy tastes. Dry, very dry with a nice white wine quality. Some sourness on aroma, really quite drinkable, nice grapefruit touches. It’s pretty good. Excellent fruit flavours and not too acidic.
