The aroma is of wild yeast and tart grapes. The flavor is tart with plenty of funky wild yeast and a little fruit (white grapes?). It’s fairly light bodied and has a very dry finish. Lactic tartness present with a sweet grainy aroma. Not a ton of funk, but a decent aroma. Nice palate, not too thin or overcarbonated. Taste is dry throughout, with a tart bready start that gives way to a sharp dry sour finish. A nice finish, but I’d like a larger funk component to it. Aroma is grape skins, a bit tannic, lemon as well as a slight pale malt character. Quite tart on the palate. Overarching fruitiness: white grape and lemon, citric sourness, grape skins, a bit of apple. Lacks a bit of depth, missing that zesty spice and yeasty funk components. Effervescent but not quite high levels of carbonation. Crisp, quite dry, nice but doesn’t quite make it to Cantillon or 3F heights.
