Aroma is tart, sour, grainy, yeasty, citric, tannin. Flavor is applo, tart cherry, brett yeast, pale malts, oak. Very interesting nose follow by a very off putting fucked up "who pissed beer into my" champagne flavor. The aroma is tart, sour, grainy, funky, citric, tannin and with wild yeast - lots going on here. Light crisp body with light stinging sharp carbonation. The flavor starts with lots of graininess with a heavy sour kick, lots of yeast and intensified lemon aspects. The finish has some oak added in. There is a lot of crazy complexity going on and I’m not sure how to really describe it, but I do know I give this beer an enthusiastic Thumbs Up . (8/3/8/3/17 - 3.9) Rerate notes - Let this get much warmer than initial notes and the flavors opened up a lot with a cheese-like mustiness and horseblanket. The palate was much softer with gentle soft carbonation. The flavors from the initial notes were still there, but when blended with the new aspect it increases the complexity and enjoyability a lot. Insanely funky, musty aroma with some woodiness, a light sourness, and a mysterious "bad but good" sort of thing. Flavors were mouthwateringly sour, musty, fruity, woody, and a bit cheesy.
