Unappealing smell, which hints of everything lambic, but in a more subtle, gentler way. At its aromatics core, it has an undeniable red apple scent (cut apples sitting for more than an hour, which have slightly browned.) Take a big sniff and you’ll smell it. To me, it smells cidery and unappealing and most of all, not what I want to sniff in a Gueuze. Apple hints continue upon tasting, although it’s more of a green apple flavor, or an apple platter. The sourness is there throughout and it’s not sweet, but where is the woody, subtle fruit, funky horsey hints.....everything else good in lambic? Mild up front, the sourness kicks in in the finish which is also dry and bitter. The only complexity is the varying degrees of sourness. Medium/light body. Very good, rather straight forward gueuze. Ok, I admit it, I made the mistake of drinking this right out of the fridge. Not a good idea. Very dry and tart when it’s cold. However, when it’s close to room temperature, it’s pretty damn good, and complex. Sweet across the tip of your tongue. Sweet with citrus, banana, honey and spice from cloves. Tart apples and grapefruit greet the back of your throat, which leads to a tart dry finish. There’s a nice farmhouse mustiness throughout. The aroma stays remarkably constant throughout the temperature change. It’s obviously musty with horseblanket and a little cheese, but there’s also sweetness from banana and apple and a yeasty/spicyness. Strong and very interesting aroma of apples and cheese, it feels tart and musty. The flavor shows apples and cheese, it’s tart and acid with some mustyness. All the elements fit very well together and they are supported by a light and dusty palate, the carbonation is lively and contributes in giving the flavors a little push and shove. Aroma is strong with ethers and hexane, backed with figs, cherries and apples. Starts very sour and puckery, with some rubbery sugars. A dose of must. Melds into an almond fruity mellowness. Foams strongly in the mouth. My first Lambic, too sour for me. Best aspect is sugary light lemon aftertaste. Improves towards bottom of bottle, with a little warm, a hint of nice alcohol and a more reduced sourness. Lumpy (1802), Carrollton, Texas, USA
