The aroma is sweet malty with notes of pumpernickle bread and caramel as well as light notes of alcohol. The flavor is sweet mlaty with primary notes of caramel, but also a light note of spices. Pours a cloudy, orangey brown with a tall, off-white head leaving some lacework. Aroma of roasted malts and yeast. Rather full-bodied with plenty of roasted malt and fruit and a whiff of yeast. Like a wooden box that has contained fresh apples, 3 hours after you’ve taken the fruit out. Bit of red cherry. Lovely aroma, smooth in mouth. Then lovely balanced finish of malt cherry and sourness, perfect balance. Bit of boiled sweet. Bottled 02/05, consume within 24 months. Well balanced beer, great finish. It slowly diminishes, leaving generous lacing all around the glass. Unexpected nose which can’t really be voluntarily. Brettanomyces triumphed in teir insatiable sugar quest. Hypothetically, the proximity to barrels of the Panil Barriquée have eased their hunger’s aspirations, but the nose is kind of vinous, wild mushroomy, plummy, yet moderately juicy. Obviously quite dry in mouth, letting musty basement and light papery/inky mettalic off tones dominate the otherwise fruity, cherry-like esters and mildly roasted malts with vanilla undertones. Finishing with strong moldy, cobwebs like dustiness. The mouthfeel has interestingly not suffered much from the bacteria, it remains medium-full and natural, filling thanks to a rich and not too agressive carbonation. What can I say, sometimes an infection is a trait I enjoy in beer. I would(will) drink again. Hildigöltur (5109), København, Denmark
