Well this one did not hold up to cellaring as well as I had hoped. The beer suffers from the paper, vinegar, and sour tastes that you get from beer getting old. The appearance is dark amber with a two finger head. The aroma has brown sugar, cola, soured fruit and a trace of earthiness. The flavor does have the nice candy sweet element from the aroma along with toasted malt but all the above mentioned bad qualities as well. Pours a deep brown/black with minimal tan head. Aroma of roasted malts, toffee and cocoa. Flavor is full of more roasted malts, coffee, cocoa and finishes with a nice hop bite. Medium bodied beer. Pours to a beautiful, bright, chestnut color, with a thick, creamy, white head, and a good bit of carbonation. The nose on this beer is fantastic with lots of good aromas of toasty and nutty malt. The palate is firm, with lots of good toasty and nutty malt flavor, on a polished, smooth, round body. This beer finishes with more fantatic clean and malty flavors up front, then ends with the perfect amount of herbal hop bitterness, and some sooth alcohol to balance. A very impressive bock bier, with fantastic malt character. A perfect beer to enjoy over the Christmas season.
