Traditional brett aroma. Flavor was sour at first but then was overcome by a mellow sweetness. Very balanced, mellow. Really easy to drink. Bright clear amber with practically no head... some little fizzy bubbles that disappear in seconds. Aroma dominated by sharp fruity tartness with some earthy wood notes in the background. Flavor adds more dimensions that shown in the nose... some not-overpowering sharp tartness- not the acidic sourness of brett, a more woody even tartness. Notes of honey, citrus fruit, and mellow sweet grains in the background. Very good and balanced. Crisp and clean on the palate, with little to no lingering finish. Pours a very bright, vaguely hazed medium golden-copper color; bright white head with good retention and lacing; really nice pour. Tons of tartness, brine (nice note from the guy before me), white grapes, and honeyed tartness in the nose; very generous, softly acidic, sour nose; a touch of tart limes and crisp apples; lots to think about. Medium-to-full mouthfeel: honey, oaky white grape notes, and plenty of mildly sour citrus upfront; nice soft levels of acidity; well-developed, dry sourness, surrounded by minerals, honey, and plenty of intricate fruit (lots of lemons); very nice, surprisingly tasty stuff. Touch of a metallic note present, but barely, on the perimeter. Medium finish: showing tart citrus, breadiness, and some lasting oak notes and toast. No head retention and clear with no sediment. Palate is not quite puckering, but close, it’s gets smooth just before you make a face. I don’t detect any brett in the taste. Lemon zest and oaky brine and sour candy. Not a ton of depth. Kinda like sucking on an oak chip that’s been soaking in apple cider vinegar, with a sqeeze of lemon. Medium to light bodied with a soft, crisp carbonation. Pungent lemons, honey, vanilla, and wet wood. Nicely balanced. Pretty impressive for a Bavik/Petrus.
