Slightly hazy ruby brown color, with a finely bubbled beige head that just won’t stop. It laces. Starts with a plumy raisin flavor, that mellows out into a fruity sweetness, but a light sweetness. Caramelized? Perhaps, but I’d say more of a slightly simmered, al dente, fruit. Wonderful, in any event. It finishes nicely, and I would say there is some hop, but it is definitely sidelined. Nose is chocolate notes, cocoa, dusty yeast notes, and dark fruit notes. Taste is dark fruits, soft alcohol, chocolate notes, caramel, and light yeast notes. Delicious! There a bit of tartness towards the back end of this. Light but dense carbonation. Light medium overall feel on the palate. Aroma is caramel, coffee and chocolate with a character that is not unlike Rochefort 8. The body is med with lite CO2. The flavors are medicinal, kahlua, sweet cherries and caramel. Some drying coffee-like bitterness in the finish. A very unique and enjoyable dubbel.
