Commercial Description:
Pisgah's first Belgian style. A Tripel ale, this beer contains moderately fruity esters with an alcoholic complexity supported by a soft malt character. This beer is pale gold in color and 9.5% ABV.

On tap at The Thirsty Monk, Asheville. Sour yeasty funk nose with lemon peel and some coriander. Fairly tart with mild wheat. Hazy yellow goldenrod with thin white lacing head. Medium body with light carbonation. Starts sweet with lots of banana and coriander. Mild wheat grainy character, some lemon rind, and flowery hop bitterness in the finish. Fairly thin, like a weak wit-tripel.

Bottle thanks to Meguiar for sharing. Hazy golden color with a medium sized off white head. Grassy, herbal aroma of Saaz hops and a bit of fruity yeastiness. Fairly dry for a Tripel. Yeasty, grassy flavor with some biscuity malts in the background. Hides the alcohol very well.

Sampled at HotShotz Indy tasting May 24, 2008 - Aroma is doughy, pale malts and hops. Pours dark gold with a medium white head and good lacing. Flavor is also doughy with pale malts, grassy hops and a touch of both lemon and spice. Palate is smooth and creamy with some alcohol in the finish. A clean tripel that would probably be better outside of a tasting.

Bottle from kp. Thanks! Gusher! Once I removed the cage, well, the cork removed itself. Bid head, great lacing. Yeasty, syrupy aroma with notes of stone fruit and alcohol. Taste of citrus, yeast, vanilla and hop bitterness. Starts off kind of sharp and mellows as it warms to room temp. A little off balance. Slighly above average.

Shared by meguiar at Paul’s Hoboken gathering. Hazy golden/blonde in color with a long lasting frothy white head. Aroma: some musty/phenolic belgian yeast, honey, and earthy. Taste is nice and easy drinking, very deceptive. Light honey sweetness, yeasty, light citrus, and spice. The phenols got just a touch rubbery with some very light bandaid near the finish, other than that this was great.

Sampled at Dickiinsonbeer’s Hoboken gathering - really hazy golden beer, with a seriously frothy head - aroma of herbs, wildflowers and honey - surprisingly soft in the mouth - honey sweetness balanced by dry herbal bitterness (yarrow and wildflower) - really nice balance - tastes more like a strong saison, which is a plus for me.

Bottle at Paul’s gathering. Very pale yellow pour, super cloudy, great head. Flavor has a touch of malt sweetness, phenols, a bit boozy. Dry, with white pepper, strong pils malt aroma.

22 oz. bottle on 5/14/08, purchased at the brewery. Big bubbly, foamy, white head collapses quickly into the clear, yellow gold body, leaving a thin bubbly layer and so-so lace. Light fruity aroma with hints of lemon and honey. Medium body, a palate cleansing, champagne like effervescence, and a dry palate measure up well. Background of gently fruity sweetness and distant grainy malt gives way to a soft peppery bite at the finish. Alcohol well hidden throughout. Very respectable tripel, nicely balanced, and refreshing.
