barely hazy mahogany brown with a minimal light tan head.
the nose is quite fruity and floral with notes of piloncilla sugar, banana starch yeasty richness, wood and... a defined brett character. yep... cement and that cinnamon-y stink that it throws off. i’m not sure if it was used intentionally but it is there (confirmed by two other nerds at the bar!).
i am shocked at how dry this is !... there are signs of cherry-like fruit, raisins and maple syrup yet it remains dry on the finish. other notes of wood, spiciness and yeasty earthiness before the brett becomes noticeable on the tongue as well. again, it seems odd but it works with the alcohol to really dry this thing out and keep the mouth feel from getting too rich.
medium bodied with a starchiness in the texture... wow, 11% huh? 8/3/8/4/15/3.8
